No, you’re not dreaming. These rich and creamy Brio berry popsicles are packed with probiotics and 6g of protein, making them the perfect refreshing treat for summer.


Brio Ice Cream Frozen Fruit Bars

Ingredients

  • 4 oz. strawberries
  • 4 oz. raspberries
  • 4 oz. blueberries
  • 4 oz. blackberries
  • 1 pint Madagascar Vanilla Brio

Directions

          1. Let pint of Brio soften at room temperature for 30-40 minutes (ice cream should be pourable).
          2. Combine strawberries and raspberries in a pan over medium-high heat and cook until mixture simmers rapidly and thickens, stirring often (10-12 minutes).
          3. Remove from heat and let mixture cool to room temperature.
          4. Combine blueberries and blackberries in a separate pan over medium-high heat and cook until mixture simmers rapidly and thickens, stirring often (10-12 minutes).
          5. Remove from heat and let mixture cool to room temperature.
          6. Pour a tablespoon of melted ice cream into each ice pop mold, then add a tablespoon of fruit jam. Continue layering ice cream and fruit jam until the ice pop molds are filled.
          7. Insert popsicle sticks and freeze for at least 6 hours (freezing time will vary based on freezer settings).
          8. To remove frozen pops from mold, run under hot water.
